
If you would’ve told me years ago that I would become a kale salad freak I probably would’ve laughed. I grew up eating just plain iceberg lettuce salad with a mix of the regular carrots and cucumbers. When I moved to Atlanta I discovered a local smoothie shop that sold kale salads. Well, while I went to grab a smoothie I purchased there kale salad just to give it a try. I have to tell you, it was so good. I practically licked the container it came in. My love for kale salad had been great ever since. The benefits of kale are numerous, which makes it even better to enjoy.
Benefits of Eating Kale

- Aids in detoxing the body by eliminating harmful toxins affectively
- Kale can also improve heart health and decrease the risk of heart disease
- Strong bone health and can health prevent conditions like Osteoporosis
For my kale salads, I like to combine fresh kale, shredded carrots and shredded purple cabbage. Afterwards, I spread my favorite homemade vinaigrette on top of my salad. I usually crush walnuts until their almost powdery and sprinkle that on top of my salad and done!
Garlic and Herb Vinaigrette
- 1/4 cup of olive oil
- 1 Tbsp of white wine vinegar
- 2 garlic minced cloves
- 1 Tbsp of Dijon mustard,
- 2 Tsp Dried oregano,
- A touch of salt and pepper
Combine these ingredients together in a bowl and whisk for about a minute and spread onto the kale salad.
